Recipe: Pumpkin pie

A pumpkin recipe for Halloween

There are many ways to cook with pumpkin, as it is a highly versatile product.

Challenge yourself and try something new! You often have some pulp when you make Halloween pumpkins and cut out scary faces. By using it for a recipe, you can easily prevent food waste and have something delicious to eat!

Pumpkin pie

It is a typical American dessert. It is often made on Thanksgiving, celebrated at the end of November. Of course, you can also make this delicious recipe in October.

Ingredients:

  • 1 pumpkin
  • 200 ml milk
  • 1 jar of condensed milk
  • 250 g flour
  • 250 g (coconut blossom) sugar
  • 2 eggs
  • 8 slices of puff pastry from the freezer or one roll of fresh puff pastry

The bottom is easily and quickly made. Remove the slices or roll from the freezer and let them thaw on a shelf. Butter a tart tin and line with the puff pastry, prick holes in it and put in the fridge. Preheat the oven to 180ยบ.

For the pie filling, peel the pumpkin, cut it into chunks and cook for 15 minutes. When the flesh is soft (you can check this by inserting a knife or skewer into a piece), remove the pumpkin from the pan, drain and puree it in a blender.

Add all other ingredients to the pumpkin puree and stir vigorously until a homogeneous mass remains. Divide the filling over the bottom and put the cake in the oven for 45 minutes (note: not every oven is the same. The cake should look golden brown).

Remove the cake from the oven and leave it to cool.
Serve with whipped cream if desired.
